TASTING NOTES
Bouquet: rich and fragrant, showcasing primary blackberry, mulberry, and tomato leaf notes.
Palate: powerful yet graceful, with youthful dark berry, blackcurrant, and raisin toast fruit, fine-grained tannins, and a long finish with red fruits, mocha and chocolate.

Pre-sale orders must be PICKED UP from either Old Bridge North Fremantle or Old Bridge Como on FRIDAY 5TH AUG - please make sure to select your preferred store at check out. 

COOKING TIPS FROM TORRE BUTCHER:

  • Temper: Take the steak from the fridge and let it come to room temperature.
  • Preheat and ventilate: Heat the grill pan or bbq to very high. Open doors/windows, turn on fans: there will be smoke.
  • Start on the bone: Stand the steak upright on its bone to warm the centre and soften the marbled fat.
  • Sear side 1: Lay the steak flat. Sear hard to char (not burn) the surface.
  • Turn carefully: Flip using non-piercing tongs (e.g., plastic-ended). Handle gently and minimally.
  • Sear side 2: Char the other side while keeping the interior rare.
  • Rest: Wrap in foil and rest in a warm oven: about 8 min for ~800 g, 10–15 min for larger cuts so juices redistribute.
  • Serve: Slice and enjoy.
